That's right - a homemade ice cream recipe that won't make you feel any sort of guilt about eating it. Also, no ice cream machine needed!
I came across this recipe on @lindsay.keosayian's Instagram page and knew I needed to try it out. Ice cream is my favorite dessert, but I don't enjoy all the added sugars (and the sugar crash that comes after). This recipe solved those issues for me! It wasn't challenging to make, but it does take some planning in advance. It was the perfect Saturday activity for us!
WHAT YOU’LL NEED:
- 1 can coconut milk (I used Trader Joe's - the can is super affordable and very clean ingredients)
- 4 ripe bananas, sliced and frozen
- 2-3 tbsp raw honey (or you could use pure maple syrup)
- Dark chocolate chips - I used Lily’s Dark Chocolate Baking Chips.
- Chopped walnuts - I used the raw walnuts from Trader Joe’s.
HOW YOU’LL DO IT:
1. Slice your bananas and freeze them. Refrigerate your coconut milk for at least 6 hours (I put the sliced bananas and a can of coconut milk in the fridge the night before making this).
2. In a food processor or blender, combine coconut milk, frozen bananas, and raw honey until smooth and creamy.
3. Transfer the mixture to a loaf pan (I used my Le Creuset loaf pan).
4. Stir in walnuts and chocolate chips.
5. Freeze for 4-6 hours. I stirred mine around hour 3 of freezing.
6. Top with additional walnuts, chocolate chips, and strawberries.
7. ENJOY!
This recipe would be super easy to double (or triple) if your heart so desires. It was a delicious summer treat that was fun to make!
